Oatmeal Bran Muffins
Wonderfully nutritious and moist muffins!
1 cup rolled or quick-cooking oats, mixed with 1 cup boiling water
2 eggs, lightly beaten
1 cup yoghurt
1 cup milk
1/2 cup molasses
1/2 cup vegetable oil
2 cups wheat bran
1 1/2 cups whole wheat flour
1/2 cup brown sugar
2 teaspoons baking soda
1 teaspoon cinnamon
1 cup raisins
Preheat oven to 375 degrees. In small bowl, mix oats with 1 cup boiling water; set aside to cool. In large bowl, whisk eggs, yoghurt, milk, molasses, and oil.
Add the oat mixture and stir until thoroughly combined.
In another bowl, stir together bran, flour, sugar, soda, and cinnamon. Stir in raisins. Fold the dry mixture into the batter.
Spoon into greased muffin tins.
Bake 20-30 minutes at 375 degrees.
Makes 18 large muffins, or 30 regular size muffins.
