This quick-to-make, very moist bundt cake is a regular dessert in my home. Yesterday, after the cake cooled, I helped myself to an afternoon treat as I watched the rain continue to fall. Over the past 2 1/2 days, we have had 2.09 inches of rain.

Pineapple Bundt Cake
- 2 cups flour
- 2 cups sugar
- 2 eggs
- 2 teaspoons baking soda
- 20 oz can crushed pineapple (pineapple and all juice)
Mix ingredients together, then beat on medium speed for 2 minutes. Pour batter into greased Bundt pan. Bake 55 minutes in a 350-degree F oven. Once cooled, sprinkle with powered sugar.
